
Who doesn’t love waffles? I’ve shared many of my cousin Kate’s delicious baking recipes before – this is an amazing addition to the bunch. And guess what? They are made with SOURDOUGH and all organic ingredients!
They do require preparation the night before, so be sure to take that into account while making them!
Night Before:
240g (1 cup) sourdough active starter
240g (1 cup) milk
125g (a heaping 3/4 cup to 1 cup depending on how you measure) All Purpose flour
1 tbsp sugar (we used coconut)
2 tbsp melted butter
1. Whisk all ingredients until smooth
2. Cover loosely with damp dishtowel
3. Let sit on your counter overnight (8-12ish hours)
Morning of (when you’re ready to cook):
1 pasture raised egg

1/2 tsp baking soda (dissolved in 1 tsp filtered water)
1. Whisk the egg, salt and diluted baking soda together
2. Incorporate egg mix into waffle batter
3. Cook in a preheated waffle iron
4. Top with melted butter and serve immediately (you may also add maple syrup!)
